Pear powder is intended for use in bakery, confectionery, meat and dairy, medical and prophylactic and other sectors of the food industry. For example, it has been established that the use of pear powder in the process of activating compressed baking yeast has a positive effect on their lifting force. It was found that adding pear powder in an amount of 1.5% to the flour mass at the stage of activation of compressed baker's yeast allows reducing the duration of the activation process by 1 hour. At the same time, the mass fraction of pectin is 12.8%, and the mass fraction of fiber is 37.0%. Pear powder has no restrictions on the maximum permissible concentration (MAC) or LD 50, since it is an absolutely natural product that has not undergone any chemical treatment.
